How to cook it · about 30 minutes

  1. Put a big pot of well-salted water on to boil.
  2. Chop the onion finely and slice the garlic. Soften them in the olive oil over medium heat for 5 minutes — do not let the garlic colour.
  3. Stir in the tomato paste and cook it for a minute, then add the chopped tomatoes. Simmer 15 minutes until it thickens.
  4. Cook the pasta until it still has a bite. Save a mugful of the water before draining.
  5. Toss the pasta through the sauce with a splash of that water until it coats. Season.
  6. Tear the basil over, grate the parmesan on top.
