How to cook it · about 45 minutes

  1. Cook the rice. When it is done, stir through the juice of a lime and a handful of chopped cilantro.
  2. Toss the chicken with the spices, salt and oil, and roast at 425°F for 25 minutes, or fry it in batches.
  3. Slice the peppers and onion and char them in a dry hot pan until they blister.
  4. Warm the drained beans and corn through with a pinch of cumin.
  5. Let everything cool before it goes in containers — steam is what makes meal prep watery.
  6. Divide between six: rice, chicken, beans, corn, peppers. Cheese and lime wedges added on the day.
