How to cook it · about 30 minutes
- Salted water on to boil.
- Slice the chicken into strips, season it, and cook it in half the butter over medium-high heat until browned through. Set it aside.
- Melt the rest of the butter in the same pan, soften the sliced garlic for a minute, then pour in the cream.
- Let it come to a bare simmer and take it off the direct heat before the cheese goes in — boiling cream and parmesan is how the sauce splits.
- Stir the grated parmesan through until smooth, then the drained pasta and the chicken, loosening it with pasta water until it flows.
- Plenty of black pepper and the chopped parsley.
