Spaghetti bolognese

How to cook it · about 55 minutes

  1. Chop the onion, carrot and celery small. Soften in the oil for 8 minutes.
  2. Add the garlic for a minute, then the beef. Break it up and brown it properly — this is where the flavour is, so give it 6 or 7 minutes.
  3. Stir in the tomato paste, cook a minute, then the crushed tomatoes and oregano.
  4. Simmer gently for at least 30 minutes. Longer is better. Season near the end.
  5. Cook the spaghetti, drain, and serve with the sauce and plenty of parmesan.
