Smash burgers
Twenty-five minutes and better than the drive-through. Needs a hot, heavy pan.

How to cook it · about 25 minutes
- Roll the beef into eight loose balls. Do not compact them and do not season them yet.
- Get a heavy pan as hot as it will go. This only works on a surface that stays hot when cold meat lands on it.
- Put two balls in, press each flat and hard with a spatula for ten seconds, then season the top.
- After about 90 seconds the edges will be lacy and brown. Scrape under, turn, and lay a slice of cheese on immediately.
- Thirty seconds more and they are done. Repeat with the rest.
- Toast the buns in the beef fat, spread mayonnaise and mustard, and build with the sliced onion and pickles.
