How to cook it · about 75 minutes

  1. Heat the oven to 400F. Peel the potatoes, cut into 2-inch chunks, cover with cold salted water, and boil 15 to 18 minutes until very tender.
  2. Meanwhile brown the lamb in a large skillet over medium-high heat for 6 to 8 minutes, breaking it up. Spoon off most of the fat.
  3. Add the chopped onion and diced carrots and cook 5 minutes. Stir in the garlic, tomato paste and flour for 1 minute.
  4. Pour in the broth and Worcestershire, add the thyme, and simmer 8 to 10 minutes until thick like gravy. Stir in the peas and season with salt and pepper.
  5. Drain the potatoes and mash them with the butter, milk and a good pinch of salt until smooth.
  6. Spread the meat in a 9x13 baking dish. Spoon the mash over and spread it to the edges to seal it in, then drag a fork across the top to make ridges. Scatter the cheese over if using.
  7. Bake 20 to 25 minutes until the filling bubbles at the edges and the top is golden. Let it rest 10 minutes before serving.
