How to cook it · about 35 minutes

  1. Heat the oven to 425F.
  2. Halve the potatoes and give them a 15 minute head start on the tray with oil and salt. They take longer than everything else, and this is the whole trick.
  3. Cut the peppers and onions into thick strips and toss them with the oil, oregano and whole garlic cloves.
  4. Add them to the tray with the sausages laid on top, and roast 25 minutes.
  5. Turn the sausages once halfway so they brown on both sides.
  6. If the sausages are done before the vegetables catch colour, give it 3 minutes under the broiler.
