How to cook it · about 30 minutes

  1. Heat the oven to 425F.
  2. Slice the peppers and onions thick and the chicken into strips about the same size, so everything finishes together.
  3. Toss the lot on a large tray with the oil, spices and salt. Use two trays if it is crowded — piled up, it steams instead of roasting.
  4. Roast 22 minutes, turning it over once.
  5. Squeeze one lime over the hot tray and scrape everything through the juices.
  6. Warm the tortillas and serve with the sour cream, the cilantro and the second lime cut into wedges.
