How to cook it · about 35 minutes

  1. Heat the olive oil in a 12-inch skillet with a lid over medium heat. Add the sliced onion, thinly sliced peppers and chopped jalapeno and cook 10 minutes, stirring now and then, until very soft.
  2. Stir in the garlic, cumin, paprika, cayenne and harissa and cook 1 minute until fragrant.
  3. Pour in the crushed tomatoes, add the salt and pepper, and simmer 10 minutes until the sauce is thick enough that a spoon leaves a trail.
  4. Make 8 small wells in the sauce with the back of a spoon and crack an egg into each. Cover the pan and cook on medium-low for 6 to 8 minutes, until the whites are set but the yolks still jiggle.
  5. Take it off the heat, crumble the feta over, scatter with chopped cilantro, and bring the whole skillet to the table with warm bread for dipping.
