How to cook it · about 40 minutes

  1. Mix the beef with the breadcrumbs, egg, half a grated onion, salt and a spoon of the Worcestershire. Shape into four oval patties.
  2. Brown them hard in a hot pan, about three minutes a side, and lift them out.
  3. Slice the remaining onions and cook them in the butter over medium heat until genuinely soft and sweet — eight minutes, not three.
  4. Add the mushrooms, cook until browned, then stir in the flour and cook a minute.
  5. Pour in the broth and the rest of the Worcestershire, return the patties, and simmer covered for 12 minutes.
