How to cook it · about 30 minutes

  1. Slice the onion and pepper thin and cook them slowly in the oil until they are soft and sweet, about 12 minutes. Move them to one side of the pan.
  2. Turn the heat up and add the sliced beef in a single layer. Leave it 60 seconds before you touch it.
  3. Chop through the meat with the edge of your spatula as it cooks, and season it.
  4. Mix the onions and peppers back through, then lay the provolone over the whole lot and let it melt.
  5. Split the rolls, butter them, and warm them cut side down in the pan.
  6. Scoop the meat and cheese straight into the rolls in sections so each one gets the same.
