How to cook it · about 45 minutes

  1. Soak the noodles in cold water for 10 minutes until pliable, then drain.
  2. Slice the chicken thin. Shred the cabbage, cut the carrots into matchsticks, and slice the green beans and celery on an angle. Chop the onion and mince the garlic.
  3. Heat the oil in a wok or your widest pan over medium-high heat. Cook the onion and garlic 2 minutes, then add the chicken and cook 4 to 5 minutes until no longer pink.
  4. Add the carrots, green beans and celery for 3 minutes, then the cabbage for 1 minute. Scoop out about half the vegetables and set aside so they stay crisp.
  5. Pour in the broth, soy sauce, oyster sauce and pepper and bring to a boil. Add the noodles and toss with tongs for 4 to 6 minutes until they absorb all the liquid and are tender.
  6. Fold the reserved vegetables back in. Serve topped with sliced green onions and lemon wedges to squeeze over.
