Holy basil stir-fry

Ground chicken fried hard with chilies, garlic and basil, over rice with a crispy fried egg. The Thai weeknight classic.

How to cook it · about 25 minutes

  1. Start the rice. Pound or finely chop the garlic and chilies together. Slice the shallot and cut the green beans into 1/2-inch pieces. Pick the basil leaves.
  2. Mix the oyster sauce, fish sauce, dark soy, soy sauce and sugar with 2 tbsp water.
  3. Fry the eggs first: heat about 1/3 cup oil in a skillet over medium-high until shimmering. Crack in one egg at a time and spoon hot oil over it for 1 to 2 minutes until the edges are brown and crispy and the yolk is still runny. Drain on a paper towel.
  4. Pour off all but 2 tbsp of the oil and turn the heat to high. Fry the garlic, chilies and shallot for 30 seconds until fragrant but not brown. Stand back, the chili fumes are strong.
  5. Add the chicken and break it up. Cook 4 to 5 minutes until no pink remains and it starts to brown. Add the green beans and the sauce and cook 2 minutes more until glossy.
  6. Turn off the heat and fold in all the basil until it just wilts. Serve over rice with a fried egg on each plate.
