Miso-glazed salmon

How to cook it · about 25 minutes

  1. Start the rice.
  2. Set an oven rack about 6 inches under the broiler and turn the broiler to high. Line a sheet pan with foil and oil it lightly.
  3. Whisk the miso, mirin, honey, soy sauce and sesame oil into a smooth paste.
  4. Pat the salmon dry, set it on the pan skin side down, and spread the glaze thickly over the tops.
  5. Broil 7 to 9 minutes, until the glaze is browned in spots and the fish flakes at the thickest point. If the top darkens too fast, move the pan down a rack for the last few minutes.
  6. While it cooks, halve the bok choy lengthwise and sear it cut side down in the vegetable oil in a skillet over medium-high for 2 minutes. Add 2 tbsp water, cover and steam 2 minutes.
  7. Serve the salmon over rice with the bok choy, and scatter with sesame seeds and sliced green onions.
