How to cook it · about 35 minutes

  1. Put a pot of salted water on for the pasta.
  2. Slice each chicken breast in half through the middle so you have four thin pieces. They cook evenly that way and nothing dries out.
  3. Season them and brown them in the oil, 4 minutes a side, then lift them onto a plate.
  4. Soften the chopped garlic in the same pan, add the chopped sun-dried tomatoes, then the stock. Scrape the brown bits up off the bottom.
  5. Pour in the cream and the grated parmesan, and let it bubble down for 5 minutes until it coats a spoon.
  6. Slide the chicken back in with any juices, cook 3 more minutes, and tear the basil over. Serve on the pasta.
