Peruvian lomo saltado

How to cook it · about 40 minutes

  1. Start the rice and bake the fries according to the bag, usually about 20 minutes at 425F. Everything else cooks fast, so get these going first.
  2. Cut the steak into strips about as thick as your finger. Toss with the cumin, salt, pepper and minced garlic.
  3. Cut the onion into thick wedges and the tomatoes into wedges, seeds scooped out. Stir the soy sauce, vinegar and aji amarillo paste together in a small bowl.
  4. Heat 2 tbsp oil in your largest skillet over high heat until it just starts to smoke. Add half the beef in one layer and sear 1 to 2 minutes without moving it, then flip for 30 seconds and take it out. Repeat with the rest.
  5. Add the last of the oil and the onion. Cook 2 minutes on high so it softens at the edges but still has crunch. Add the tomatoes for 1 minute.
  6. Return the beef, pour in the sauce and toss for 30 seconds. Turn off the heat, fold in the hot fries and a handful of chopped cilantro, and serve right away next to the rice.
