How to cook it · about 35 minutes
- Heat the oven to 400F. Get the rice on.
- Dry the thighs with kitchen paper, season them well, and lay them skin down in an ovenproof pan with the oil over medium-high heat.
- Leave them alone for 7 minutes. The skin releases itself when it is ready — if it sticks, it is not.
- Turn them, then stir the honey, soy, vinegar and sliced garlic together and pour it round, not over, so the skin stays crisp.
- Put the pan in the oven for 20 minutes, spooning the sauce over the meat once halfway.
- Scatter the sliced spring onions and serve it on the rice with the pan sauce poured over.
