How to cook it · about 25 minutes

  1. Rinse the rice until the water runs mostly clear, then cook it.
  2. Slice the onions into thin half-moons. If the beef is not already shaved, cut it as thin as you can into 2-inch pieces.
  3. In a wide skillet, combine 1 cup water, the dashi granules, soy sauce, mirin, sake and sugar. Bring to a boil over medium-high.
  4. Add the onions and simmer 5 minutes until soft and see-through.
  5. Add the beef, separating the slices with chopsticks so they do not clump. Simmer 2 to 3 minutes until no pink remains, skimming off any gray foam.
  6. Fill bowls with rice and ladle the beef, onions and some broth over each. Top with sliced green onions and a little pickled ginger.
