How to cook it · about 60 minutes

  1. Mix half the yogurt with the juice of one lemon, half the garlic, the oregano, oil and salt. Turn the chicken through it and leave it at least an hour, or all day.
  2. For the sauce, grate the cucumber, squeeze the water out of it in your hands, and stir it into the rest of the yogurt with the remaining garlic and the second lemon.
  3. Heat the oven to 425F. Spread the chicken on a tray in one layer and roast 25 minutes.
  4. Put it under the broiler for 4 minutes at the end to get the charred edges that make it taste like a spit.
  5. Rest it five minutes, then slice it across into strips.
  6. Warm the pitas, and build with the sauce, the chicken, sliced tomato, onion and crumbled feta.

Amounts are on the list above — they change with the number of people; the steps do not.
