How to cook it · about 45 minutes

  1. Melt the butter, then stir in the sugar and cocoa while it is still hot. It will look grainy and wrong — keep going.
  2. Let it cool for five minutes, or the eggs will scramble.
  3. Beat in the eggs one at a time, then beat hard for a minute. That beating is what makes the shiny crackly top.
  4. Fold in the flour, salt and vanilla until it just disappears, then the chips.
  5. Bake in a lined 8-inch square tin at 325°F for 30 minutes. A skewer should come out with damp crumbs, not clean.
  6. Cool completely in the tin before cutting, however hard that is.
