How to cook it · about 45 minutes

  1. Cook the hash browns until properly crisp and set them aside. Soft potato makes a soggy burrito after freezing.
  2. Brown the sausage with the chopped pepper and onion, then tip that out too.
  3. Scramble the eggs in the butter slowly and stop while they still look slightly underdone — they cook again on reheating.
  4. Let everything cool to room temperature before you build. This is the step that decides whether they survive the freezer.
  5. Fill each tortilla with egg, sausage, potato and cheese, fold the sides in and roll it tight.
  6. Wrap each one in foil, put them all in a bag, and freeze. Reheat from frozen in the microwave two minutes, unwrapped.
