How to cook it · about 480 minutes

  1. Mix the paprika, cumin, brown sugar, salt and pepper and rub it over every surface of the pork.
  2. Lay the sliced onions in the bottom of the slow cooker and sit the pork on top. Add the vinegar and nothing else — no water. It makes plenty of its own liquid.
  3. Cook on low for eight hours. It is ready when a fork twists in it with no resistance, not when the clock says so.
  4. Lift it out, pull the bone away, and shred the meat with two forks.
  5. Skim the fat off the liquid left behind and stir a few spoonfuls of that liquid back through the meat so it does not dry out.
  6. Add the barbecue sauce to taste and pile it into the buns.
