Classic meatloaf with mashed potatoes

Tender meatloaf with a sweet ketchup glaze and a pile of buttery mashed potatoes. Leftovers make great sandwiches.

How to cook it · about 90 minutes

  1. Heat the oven to 350F. Finely dice the onion and mince the garlic. Soften them in 1 tbsp butter over medium heat for 5 minutes and let them cool a little.
  2. In a large bowl, stir the breadcrumbs with 0.5 cup milk and let them soak 5 minutes. Add the eggs, the onion and garlic, the Worcestershire, thyme, 2 tsp salt, pepper and 0.25 cup of the ketchup.
  3. Add the ground beef and mix gently with your hands just until combined. Squeezing it too much makes a tough meatloaf.
  4. Shape it into a loaf about 9 by 5 inches on a foil-lined sheet pan. Stir the rest of the ketchup with the brown sugar and mustard and spread half over the top.
  5. Bake 45 minutes, spread on the rest of the glaze, and bake 15 to 20 minutes more until the center reads 160F. Let it rest 10 minutes before slicing so it holds together.
  6. While it bakes, peel and cut the potatoes into chunks, cover with cold salted water, and boil 15 to 20 minutes until a fork slides in easily. Drain, then mash with the remaining butter, 1 cup warm milk and 1 tsp salt.
  7. Slice the meatloaf thick and serve with the mashed potatoes.
