How to cook it · about 30 minutes

  1. Beat the soft butter with both sugars for a full three minutes until it is pale and fluffy. This is what makes them chewy rather than flat.
  2. Beat in the eggs one at a time, then the vanilla.
  3. Stir in the flour, baking soda and salt until it just disappears, then the chips.
  4. Spoon golf-ball lumps onto a lined tray, well apart. Bake at 375°F for 9–11 minutes.
  5. Take them out when the edges are set and the middles still look underdone. They finish on the tray, and this is the difference between a chewy cookie and a hard one.
