Chicken teriyaki

How to cook it · about 30 minutes

  1. Rinse the rice in a few changes of water until it runs mostly clear, then cook it.
  2. Stir together the soy sauce, mirin, sake and sugar until the sugar dissolves.
  3. Pat the chicken dry. Heat the oil in a large skillet over medium, and lay the thighs in skin side down. Cook 8 to 10 minutes without moving them, until the skin is deep golden and crisp.
  4. Flip and cook 4 more minutes. Steam the broccoli florets in the microwave or a covered pot with a splash of water for 4 minutes while you wait.
  5. Spoon off most of the fat in the pan. Pour in the sauce, turn the heat to medium-high and let it bubble for 3 to 4 minutes, spooning it over the chicken, until it looks like syrup and coats the meat.
  6. Check the thickest piece reaches 165F or shows no pink. Slice, spoon over the glaze, and top with sesame seeds and sliced green onions. Serve with the rice and broccoli.
