How to cook it · about 50 minutes

  1. In a bowl, mix the olive oil, juice of 1 lemon, 4 cloves of grated garlic, the cumin, paprika, coriander, turmeric, cinnamon, 1 1/2 tsp salt and 2 tbsp of the yogurt. Add the chicken and coat it well. Marinate at least 30 minutes, or overnight in the fridge.
  2. For the garlic sauce, stir together the rest of the yogurt, the mayonnaise, the last 2 cloves of grated garlic, the juice of the second lemon and a pinch of salt. Chill until needed.
  3. Heat the oven to 425F. Spread the chicken flat on a foil-lined sheet pan and roast 25 to 30 minutes until the edges are charred and it reaches 175F.
  4. For extra crisp edges, turn on the broiler for the last 2 to 3 minutes, watching closely.
  5. Rest the chicken 5 minutes, then slice it into thin strips. Thinly slice the onion, chop the tomatoes and lettuce, and slice the pickles.
  6. Warm the pitas, then fill each with chicken, lettuce, tomato, onion, pickles and plenty of garlic sauce. For meal prep, pack the chicken over rice with the vegetables and sauce on the side.
