How to cook it · about 40 minutes

  1. Season the steaks. Beat the eggs with a cup of the milk in one dish and season two cups of the flour heavily in another.
  2. Dip each steak in flour, then egg, then flour again, pressing hard. Let them sit five minutes so the coating sticks.
  3. Heat half an inch of oil in a heavy skillet to about 340°F. Fry two at a time, three to four minutes a side, until deep gold.
  4. Keep them warm on a rack. Pour off all but about three tablespoons of the fat, leaving the brown bits in the pan.
  5. Whisk in the remaining flour over medium heat and cook it a full minute — raw flour is what makes gravy taste of paste.
  6. Pour in the rest of the milk a little at a time, whisking. Simmer until it coats a spoon, then black pepper until it looks like too much. That is the right amount.
