How to cook it · about 55 minutes

  1. Smash and peel the garlic cloves. Put the chicken in a pot with the garlic, soy sauce, bay leaves and peppercorns and leave 20 minutes if you have time.
  2. Lift the chicken out and pat it dry. Heat the oil in the pot over medium-high heat and brown the chicken skin-side down for 5 to 6 minutes until golden. Brown the other side 2 minutes.
  3. Pour the marinade back in with the vinegar and 1/2 cup water. Bring to a boil and let it bubble for 2 minutes without stirring. This cooks off the sharp edge of the vinegar.
  4. Cover and simmer on low for 30 minutes, turning the chicken halfway, until it is tender. Start the rice.
  5. Uncover, add the brown sugar, and simmer 5 to 10 minutes more until the sauce reduces and turns glossy. Taste and add a splash more vinegar or soy to your liking.
  6. Serve over rice with plenty of sauce spooned over and sliced green onions on top.
