Cabbage and sausage skillet
Cheap, fast, and better than it sounds. One pan, twenty-five minutes.

- Slice the sausage into coins and brown them in a dry pan. Take them out and leave the fat behind.
- Add the oil, the sliced onion and the grated carrot and cook until soft.
- Add the shredded cabbage a handful at a time — it looks like far too much and collapses to a quarter of it.
- Cook it 8 minutes over high heat, stirring rarely. Letting it catch a little in places is where the flavour is.
- Stir the garlic and paprika through for a minute, then return the sausage.
- Take it off the heat, add the vinegar, and season it hard. Cabbage takes more salt than you expect.
