How to cook it · about 70 minutes

  1. Brown the sausage with the chopped onion and pepper. Drain it well or the casserole goes greasy.
  2. Tear the bread into rough cubes and scatter half in a buttered baking dish, then half the sausage and half the cheese. Repeat.
  3. Beat the eggs with the milk, mustard and salt and pour it evenly over. Press the bread down so it all gets wet.
  4. Cover and refrigerate overnight — this is what makes it set properly rather than being scrambled egg on toast.
  5. Bake uncovered at 350°F for 50–60 minutes. It is done when the middle no longer wobbles.
  6. Rest ten minutes before cutting.
