How to cook it · about 35 minutes

  1. Dry the beef on paper towel and sear it hard in a very hot pan, in two batches. Thirty seconds a side. Take it out — it is not cooked through and should not be.
  2. Cook the sliced onion and mushrooms in the butter in the same pan until browned and the liquid has gone.
  3. Stir in the flour, cook a minute, then pour in the broth and scrape the bottom of the pan.
  4. Simmer until it thickens, then take it OFF the heat before stirring in the sour cream and mustard. Sour cream splits if it boils.
  5. Return the beef and any juices, warm through for a minute, and serve over the noodles.
