Beef kofta

How to cook it · about 35 minutes

  1. Start the rice according to the package.
  2. Grate the onion on a box grater and squeeze out its juice with your hands. Finely chop most of the parsley and mince 2 cloves of garlic.
  3. In a bowl, mix the beef, onion, chopped parsley, minced garlic, cumin, coriander, paprika, allspice, cinnamon, 1 1/2 tsp salt and the pepper. Knead it with your hands for 2 minutes until sticky — this keeps the kofta from falling apart.
  4. Divide into 12 pieces and shape each into a finger-shaped log about 4 inches long, around a skewer if you have them or free-form if not.
  5. Cook on a grill or grill pan over medium-high heat, or under the broiler on a foil-lined sheet pan, for 8 to 10 minutes, turning a few times, until browned and cooked through to 160F.
  6. Stir the yogurt with the last garlic clove grated, a squeeze of lemon and a pinch of salt. Dice the tomatoes and cucumber.
  7. Serve the kofta over the rice with the tomato and cucumber, the yogurt sauce, the rest of the parsley and lemon wedges.
