How to cook it · about 30 minutes

  1. Start the rice.
  2. Slice the steak thin across the grain — about 1/4 inch. It is easier if the steak spends 15 minutes in the freezer first.
  3. Toss the beef with 1 tbsp soy sauce, 1 tbsp cornstarch, the baking soda and 1 tbsp water. Let it sit 15 minutes; this is what makes it tender like a restaurant.
  4. Whisk the sauce: 3 tbsp soy sauce, the oyster sauce, brown sugar, sesame oil, the last 1 tbsp cornstarch and 1/2 cup water.
  5. Cut the broccoli into bite-size florets. Put them in a skillet with 1/4 cup water, cover, and steam over medium-high for 3 minutes until bright green. Tip them out.
  6. Wipe the pan, add 2 tbsp oil and heat on high until it shimmers. Sear the beef in two batches, 1 to 2 minutes each, without moving it much. Set aside.
  7. Add the last 1 tbsp oil, the minced garlic and ginger for 30 seconds, then pour in the sauce. Stir until it bubbles and thickens, about 1 minute.
  8. Return the beef and broccoli, toss to coat, and serve over rice.
