How to cook it · about 50 minutes

  1. Make the pickles first: peel the carrots and daikon and cut them into thin matchsticks. Stir the rice vinegar, 3/4 cup warm water, 3 tbsp sugar and the salt until dissolved, then pour it over the vegetables. Leave at least 30 minutes.
  2. Heat the oven to 400F. Finely chop the green onions and mince the garlic.
  3. Mix the pork, garlic, green onions, fish sauce, soy sauce, cornstarch, the remaining 1 tbsp sugar and the black pepper. Roll into 1 1/2-inch balls and set them on a lined sheet pan.
  4. Bake the meatballs 15 to 18 minutes until browned and cooked through.
  5. Stir the sriracha into the mayonnaise. Slice the cucumber and jalapeños thinly.
  6. Warm the bread in the oven for 3 to 4 minutes until the crust crackles. Split each piece along one side without cutting all the way through.
  7. Spread the sriracha mayo inside, pack in the meatballs, squash them slightly, then add drained pickles, cucumber, jalapeño and a big handful of cilantro sprigs. Eat right away.
