How to cook it · about 55 minutes

  1. Heat the oven to 375F and put salted water on.
  2. Break the sausage up in a pan with the oil and brown it, then add the chopped onion and garlic until soft.
  3. Add the tomatoes and oregano and let it simmer while the pasta cooks.
  4. Boil the ziti two minutes short of the packet time. It finishes in the oven, and fully cooked pasta comes out mushy.
  5. Stir the drained pasta through the sauce with the ricotta, tip it into a baking dish, and cover it with the mozzarella and parmesan.
  6. Bake 25 minutes until it is bubbling at the edges and browned on top.
