How to cook it · about 40 minutes

  1. Cut the cauliflower into small florets and the potatoes into 3/4-inch cubes. Chop the onion and tomatoes, and grate the garlic and ginger.
  2. Heat the oil in a wide pan with a lid over medium heat. Add the cumin seeds and let them sizzle for 20 seconds, then add the onion and cook 6 minutes until soft.
  3. Add the garlic, ginger and sliced serrano for 1 minute, then the turmeric, coriander and chili powder for 30 seconds.
  4. Add the potatoes and salt and stir to coat. Cover and cook 8 minutes, stirring once or twice.
  5. Add the cauliflower and tomatoes, stir well, cover and cook over medium-low heat for 15 to 18 minutes, stirring gently every 5 minutes, until a knife slides through the potatoes. Add a splash of water only if it starts to stick.
  6. Uncover, turn the heat up for 2 minutes to dry it out and brown the edges. Stir in the garam masala and cilantro and serve with naan.
